Nicholas has become quite good at making scones and clafouti and (finally) flipped over to other pages in the King Arthur Flour Baker's Companion... ones with Muffins!! For our first try, we substituted Cranberries for Blueberries in this recipe.
Dried Cranberries, melted butter, sugar, eggs, and Nicholas' beloved KitchenAid. After watching enough FoodChannel, he also had to have the stainless steel prep bowls. We found these bowls at Ikea!
It looks like a lot of cranberries, but it's so good!
I made a little mess trying to get the mix in the muffin cups. But I also sprinkled on a generous layer of turbinado sugar. It makes for deliciously crunchy tops!
